The main objective of the Israel Olive Board is to improve the quality of olive oil produced in Israel. The most significant result has been the introduction of quality classification of all oil produced by Olive Board members. The Israel Olive Board defines three different quality levels:

- Extra Virgin Oil
- Fine Virgin Oil
- Virgin Oil

The label indicates product quality and allows the consumer to easily adapt his purchase to his or her requirements.
